Sweet Potato Fritters!! AMAZING!!! Quick and easy, healthy and great on the calories. I use this website called Myfitnesspal and I type in all of my recipes to get the calorie count etc. If you use myfitnesspal, find me !! PatrioticPeacock


These will be soft but I offer a firmer textured additive to the recipe.
What you will need is:
4 baked sweet potatoes (I wrap in foil after rinsing and poking holes and bake until soft).

1/2 cup of frozen corn
2 green onions sliced thing
1 cup of diced cilantro
Salt
Pepper to taste
1/2 tsp cumin or ground clove 
1 large egg
(IF YOU ARENT Paleo and wish to have a firmer fritter you can add 1 cup of bread crumbs and 1/3 cup of corn meal).


mix it all up!
Heat a skillet until it's screaming hot and then lower down to medium heat.
Add a tbsp of butter (unsalted) and a squirt of olive oil to keep the butter from burning.

Spoon out even amounts of the mixture and put in the pan and press into a patty shape. You want to cook it about 5 minutes and then gently flip..they are soft since there isnt any grain flour etc to bind it firmer (unless you are using the non paleo version). and cook some more on the other side..like so


Voilla!! DONE! you can serve it with some sour cream or greek yogurt if you wish!.. I served mine plain to my daughter and for us adults, I served with a little Salsa Verde mixed with a smidge of sour cream.

Served with a roasted boneless pork loin! AMAZING!! it was a big hit and always is in our family!

Who doesn't love an enchilada? I know I DO!!!! However, I don't eat corn tortilla or flour tortilla so I felt like I was missing out then BAM!! a friend gave me the idea of a green enchilada but I had to tweak it to fit my Paleo needs, cut out a couple of things like the tortilla and cheese (I will add those options for you though).  This was such a huge hit! I think we ate the entire pan between 3 of us for Dinner and lunch the next day and it's literally guilt free!

Here is what you need for Ingredients!!


so it's almost the same ingredients as my Salsa verde.

Ingredients:
2 lbs of chicken breast prebaked and seasoned simply with salt and pepper (shredded when cooked and set aside).

two very ripe Avocados
8 medium tomatillos
1 lime
3-4 jalapeno depending on your heat level
1 cup of cilantro
Optional: 16oz light Sour Cream

Directions:
Peel, wash and slice your Tomatillos in half.... line them cut side down on a foiled cookie sheet and broil in the oven for about 5-10 minutes until they get soft and start to char on top.

When they are cooked simply toss all of your ingredients into a blender or food processor. I personally use  a Ninja Blender! I think it's the best thing out there! Blend until it's an even consistency and looks like this. (if you are desiring a more creamy sauce and aren't concerned with dairy, then toss in your sour cream..greek yogurt will do too, before you blend).


Now that the sauce is done! you have a couple of options..

Paleo way: Spray a casserole dish (I have an olive oil mister)....then toss in your shredded chicken and pour the sauce on top. Bake at 350 degrees for about 20 minutes. Serve and enjoy!!!

Non-Paleo way..... spray a casserole dish... Take your tortilla and spread some sauce on, put some chicken and roll it and lay it in the pan....continue this until the enchiladas are touching side by side until the pan is full. Pour the remaining sauce On the Enchiladas and bake at 350 degrees for 20-30 minutes.

Sadly, I do not have a finished product picture because we ate it and I forgot lol!!

Well it's been awhile and I apologize for that!! I had suffered a traumatic spinal injury in a fall and actually broke my back, ruptured 3 discs! It's been rough but I am finally back on my feet and feeling really well. I'm not in any pain anymore and I can start working out again!!  So I am back at the weight loss, health and wellness grind with my amazing Paleo meal plan, Xtreme 5000 and ACE, my Saba Fit Kit workout routine (no gym required all the equiptment you need and video is in this kit check out www.sabaforlife.com/PatrioticPeacock ).

One of my most favorite snacks is Salsa Verde!! It's sooo low in calories, only 25 calories per serving. This recipe makes about 10 servings (very generous). When you eat it, it almost feels like a guilty pleasure, it's so tasty and so addictive. I put it on meat or chicken or even use raw veg like peppers and dip and scoop it!  If you AREN't Paloe and eat Tostitos, the lime ones are AMAZING with my Salsa Verde.  It's fast and easy to make and sure to be a hit!

Ingredients:
8 medium/Large Tomatillos
3 raw Jalapeno
1/3 a medium Sweet Onion
2 limes
1 cup cilantro raw
2 tbsp Agave
1 tsp of salt

Peel and slice your Tomatillos. You do want to wash them after you peel them if you have never worked with them before because they can be sticky from the skin leaves on them.  Next lay them cut side down on a foil lined cookie sheet.... 

Slice your jalapenos the long way and take out the seeds. put them along the cookie sheet as well with the tomatillo

 Turn on your broiler in the oven and broil them until they start to char on the top and get soft. usually about 5-10 minutes (keep an eye on them).  The end result will look like this...


Next you want to take the cooked Tomatillo and Jalapeno and put in a blender. I personally use a Ninja because it blends so well from salsa to frozen fruit smoothies! 

Toss in your :
Cup of diced Cilantro
Half of sweet onion (I personally just cut it in big chunks because the ninja will do the job for you)
Salt
and squeeze the two limes into the blender like so...I also use a fork.. You stick the fork in the half of lime and squeeze and twist..it helps get the most juice out (random tip if you didnt know).

I also put in Agave. I like to keep things sugar free and paleo the best I can but if you eat sugar you can substitute the agave for white granulated sugar.



Turn on that blender to puree and let it go!!!! that is it!! once everything is the same consistency and no big chunks, you are done!! you can chill or serve right away.    Here is the gorgeous green color! Amazing and an example of how I incorporate it in a meal (roasted chicken, lima beans sauteed with bacon and jalapeno).

  • I love Mayonnaise!! I'm picky! My mama raised me right and you don't buy cheap mayo! If you can't have Cains (it's a northern brand we can't get in texas) then Hellman's Light is the next best thing! HOWEVER it's not paleo friendly so I have been doing without mayo. It makes me sad, I love mayo on my burgers, in chicken salad, deviled eggs, crab salad, oh heck I can go on all day about the love of a good mayo! I've missed having those staples in my life but I found that I CAN have mayo, I just need to not use vegetable oil or corn oil, none of those blends. Instead I can use Avocado oil and guess what? I love it far better than the brands I grew up on!! My daughter likes it on her burger woot! she knows what's good! The dips you can make or creamy spicy mustards and sauces for a veggie platter swoon! My daughter loves cucumbers and raw green peppers so for her to have a dip is great! She's not a big dipper, she doesn't dip French fries, or her chicken etc but she loves to dip raw veggies!! so I'm stoked to be able to give her a healthy dip without all those chemicals found in regular store bought mayonnaise.

    To make the mayo, I recommend that you take out your eggs about an hour or two prior to making so that they are room temperature. It just works better if the egg is the same temp as the oil. Less breaking! Also you can hand whisk it (takes a bit of time) or you can use an immersion blender, vitamix or I personally use my Ninja. It's fast and easy and amazing!!!!!!!!!!! Now there is this great Paleo blogger (Nom Nom) who uses Macadamia Nut oil!!!! She says that has a nice nutty taste so you can try that too if you like that sort of nutty earthy flavor!

    Ingredients: (NOTE I ALWAYS DOUBLE THIS RECIPE so we have some in the fridge in a mason jar for later!)
  • 1 large egg yolk (room temp)
  • 1/4 teaspoon salt
  • 1/4 teaspoon Dijon mustard (or you can use dry mustard whichever you have on hand)
  • 1 1/2 teaspoon lemon juice
  • 1 teaspoon white vinegar
  • 3/4 cup  avocado oil
  • Directions:
  • Take your egg yolk and all other ingredients EXCEPT the oil.
  • Put into whichever device you are using, a bowl, a jar, a ninja etc and mix just enough so that the yolk is thick and bright. About 30 seconds by hand, around 10 by machine.
  • NOW the tricky part!! You want to take 1/4 cup of your avocado oil and slowly pour it in as you are mixing/whisking/blending......  Repeat with the next 1/4 cup........slowly pour as you are mixing.. Then the last 1/4 cup just pour and and mix/whisk!! Voila! you made mayo!, Look how healthy, quick and CHEAP that was!!

    Expiration tip....Make this with freshly bought eggs! The mayo only lasts in the fridge about 1 week PAST the expiration date of your eggs!

  • Who doesn't love tacos???? Why not a Paleo version? AND Gluten Free A healthy version? A cost effective healthy version that your kids will love??? Ok so there are a few staples that you need to get together first. Like making a taco seasoning. I mean unless you want to buy one of those packet things but those have MSG and other chemical preservatives and such in them which personally I can't have. They are huge migraine triggers for me. Plus It's cheaper to make my own. I have a huge batch. Keep it in a mason jar with a label on it! you will always have your own!

    So here is how you make your own taco seasoning. This is what you need to first do this. Now mind you, you can use this seasoning on ANYTHING!! Use it on ground beef, ground chicken, ground turkey. Make tacos with cauliflower tortillas, make this taco pie, Make Taco salad!! there are so many uses I can go on all day. Make a big batch and share it with your mom together so you both have a small jar at home and you never need to go and buy it.  A TIP!! THOSE PACKETS YOU BUY IN THE STORE HOLD 1 -2TABLESPOONS. So whenever a recipe calls for a taco seasoning packet.. Just use 1-2 tablespoons of your premade stuff. the shelf life is like forever on this if you keep it in a mason jar or something air tight!.

    OK so Taco Seasoning:
    In a Jar mix: (NOTE I PERSONALLY MAKE probably 6-8 times this amount at once and put it all in a jar so I don't have to make it often)
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper  flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt (optional)
  • 1 teaspoon black pepper
  • Ok now...Taco Pie Crust! It makes it more like a thicker biscuit type crust which is A-Okay with me
    2 ½ cups blanched almond flour
    ½ teaspoon sea salt (regular salt if you like)
    ½ teaspoon baking soda
    ¼ cup butter or soy spread (some use GHEE I personally do not like that)
    2 eggs
    1 tablespoon agave nectar or honey, or your sugar substitute of choice

    Directions for biscuit mix:
    In a medium bowl combine almond flour,  salt and baking soda.
    In a large bowl blend together butter, eggs and  agave/honey.
    Stir the dry ingredients into the wet until a nice dough forms,  it will be sort of sticky.
    Set aside.

    Taco Pie Filling
    2lbs ground meat of choice, I personally use ground chicken or turkey
    1-2 tablespoon taco seasoning
    1 can of diced  tomatoes, undrained (or my cheap option just dice a few roma tomatoes myself)
    Cheese (optional) I don't use cheese for me but on some I put it for others like kids etc
    taco toppings! (lettuce, black olives, tomato, onion, avocado, etc.)

    Brown ground meat in a pan, when half way cooked, I like to add 1 tbsp off taco seasoning. Let it continue to cook through. Taste, if it's in need of a little more flavor, i add another tablespoon. Then toss in the tomatoes and a little water. Mix well and let simmer until the liquids evaporate.

    While that is simmering, go ahead and get this crust set up now.  Preheat your oven to 350.
    Grease a deep dish pie pan or even a casserole dish, whatever works for you! Personally I use an 11x13  With damp hands (it prevents the dough from sticking to your fingers!!) press the biscuit dough into your pan. Bake it partially for 10 minutes so the dough starts to look like it's set up a bit.

    When that is done, pour your meat into to the pie crust, IF YOU ARE using cheese, at the cheese as well (I put cheese on half or a 1/4 of the pie) and then return this to the oven and bake for about 15 minutes give or take.

    Cut this baby up and let everyone add their toppings..lettuce, olives fresh tomatoes! whatever you want!! and enjoy!!

    Cost break down

    Almond flour costs about $5 per bag. You use maybe $1 max worth (again im being generous
    Im not even counting the salt or baking soda because they are staples and cost you pennies for such a tiny amount.

    Crust:
    Flour $1
    Honey/etc $ 0.50
    Butter $ 0.50
    Eggs $ 0.15

    Total: $2.15

    Filling:
    2lbs ground turkey $5.00
    Tomatoes: $1.50
    Total: $6.50

    Toppings:
    Variable depending on what you want but we will say, lettuce, olives, tomatoes, avocado
    1/4 head of lettuce, 1 avocado, half can of olives, dice tomato $3

    TOTAL MEAL: $11.65
    This makes 12 servings (most people always go back for another slices lol but serving size wise it is 12) so cost per serving is....... A WHOPPING $0.97  Now if you use beef instead of turkey it will be a little more, if you add cheese it will cost a little more but seriously how much more? not much. I didn't add the cost of spices because you use such a little bit, it is pennies on the dollar.  So again, how much would it have cost you to make enough tacos for 12 people buying unhealthy preservative filled taco shells? You can't say eating healthy is expensive

    I had promised to post some healthy meals on a budget. Especially healthy PAELO meals on a budget! WOOT get excited!!
    Now, if you do not like Sundried tomatoes then try something different. I never liked them more so I was afraid to try them because I didn't really know what they were until someone fed me sundried tomato pesto and I was in love!!!!!!! Ok so if you don't like sundried tomatoes then try some nice sautéed baby bella mushrooms or white mushrooms. Really it's ok to experiment. This just gives you an idea for something different! We all need a variety in our life because honestly, when we get bored with our food that is when we crash! Remember, all of my recipes are for a family of 4 usually with leftovers. I love leftovers. This meal will have 6 servings  Also, remember any recipes that you want me to make makeover into healthy budget friendly versions just comment or email [email protected] and you will be my next blog post

    Ingredients:
    1 jar sun-dried tomatoes in oil (you can buy whole or julienne cut. I use julienne cut but sometimes the whole goes on sale and well you can just cut them yourself!) 

     2 lbs boneless chicken breasts (I usually buy bulk on sale and freeze so just be sure they are thawed)
     
    2 tbsp. minced fresh basil (if you only have dried that's fine! I use fresh because it's free since I grow it)

    8 cloves of garlic, sliced thin

     Salt and pepper to taste (I use sea salt and fresh cracked pepper, you use whatever you have!)

    Preheat oven to 375

    Cut your chicken breast in half length wise.
    Line them up together in a large glass baking dish
    Sprinkle on your salt and pepper to taste, sprinkle on your basil
    Top with your sundried tomatoes and pour the oil from the jar ON the chicken as well.
    Tightly wrap the glass dish with foil and bake for 20 minutes.
    After 20 minutes, remove the foil and continue to bake for another 15 minutes to finish cooking the chicken through.

    For Side dishes! Whatever you want! I personally served Carrots sautéed with sea salt and spinach with garlic and lemon! Amazing!!!!!!!!!!!!

    Now for the price break down. Again it will vary dependent upon region and if you can find things on sale at a better price than I got them!

    Sundried Tomatoes: $2.99
    Chicken: $3.98 (I buy a lot of boneless chicken breast on sale for $1.99 a pound and freeze it!)
    Basil: for Dry basil $0.30 (if that i'm being generous I mean if you buy a spice jar of it it's what? $2-3 max)
    Garlic: $1

    Entrée for 6 servings: costs $8.27 
    Add the sides: $3.99
    Total meal cost for 6 servings: $12.26

    COST PER PERSON IS~~~~~~~~~~~~~~  $2.04 Now... tell me that you can't afford that!
    For a family of 4 that is Dinner PLUS 2 lunches! for $12, you have served 6 meals! HEALTHY meals and if you shops sales you can totally get it cheaper but like I've said before. I'm not coupon sale savvy

    As I had shown previously in my Paleo Tips blog post (can be found by clicking on "Paleo" under the categories on the right sidebar) I showed you that you can create a healthy paleo meal for your family on a budget and CHEAPER than eating convenience food, or junk like hamburger helper that so many people without a large food budget think they HAVE to feed their family in order to get by and that is just not true. So periodically I am going to show you that you can have healthy meals. YOU can eat Paleo on a budget! YOU can just eat healthy on a budget. There really is no excuse. Limited income is NO excuse! You are going to spend more as I have previously shown in my meal comparison on junk boxed meals full of preservatives, full of fat and devoid of solid wholefood nutrients than you would on a clean healthy delicious meal. Those convenience foods dull your taste buds. You will truly learn how amazing fresh food tastes when you detox all the crap out of your body!! You can do it, You will be amazed at yourself and you will be amazed at how much you can eat, how healthy you can eat and the fantastic flavor of your foods and THE VARIETY of your foods when you eat clean! 

    A couple of things. When I post prices, I am posting what it costs me here in San Antonio Texas. It may and most likely will cost you more if you live in Los Angeles or New York City. However, you will still save money because if your head of lettuce costs more in NY well then so does your frozen pizza. It all evens out.  Don't be afraid to buy store brands. Just read the labels. LABEL READING IS IMPORTANT!!!! Learn to read labels. Often times store brands are identical in ingredients and nutritional content as the brand name and will save you a bit of money and over the cost of your grocery bill that adds up! Also, I do not coupon! I am not coupon savvy, I don't have the time or patience. Also, you will notice an importance key factor in couponing. You do not see fresh fruit, veggie or protein coupons. The junk that coupons do cover for the most part, I don't want.  Also, HIT UP YOUR LOCAL Farmers Markets. YOU HAVE THEM. I don't care where you live, you have a co-op, you have a farmers market. FIND IT! Just today I bought a huge bushel of fresh local grown green beans, 6 huge fresh Zucchini, a Big sweet seedless watermelon and a box of fresh from the vine tomatoes..........ready $6   BUY BUY BUY BUY BUY and freeze the things you can!! Take those green beans. cut off the ends.. rinse in cold water. toss on a cookie sheet and throw in your freezer for a few hours. THAT my friends is how you FLASH Freeze. Then once frozen you just take them off the cookie sheet and put them in clearly marked freezer bags for future use. NOW you have freshly frozen green beans CHEAP. We all know how expensive blueberries are right? Here during the off season a half of a pint can cost upwards of $3, to me that is crazy. Well during blueberry season our farmers market and the local grocery store here had blueberries on a crazy sale! PINTS!! YES WHOLE PINTS on sale for $1.25 hellloooo! I bought 12. Yes 12 pints just to freeze not even to eat right then. I brought them home, rinse them off and spent the next day flash freezing them and putting 12 pints of blueberries into freezer bags. Now I have enough blueberries for the fall and winter to make smoothies and sweet treats and I'm not buying anything!! I did the same thing with Strawberries! they were on sale for $1.50 per pound. I bought so many! I cut them in half, hulled them and flash froze them for desserts, for smoothies and whatever else we want! Do you know how much just 8 ounces of FROZEN strawberries cost in a grocery store?? It's a lot and you are paying per weight of FROZEN strawberry not fresh.

    Save your pennies, invest in an extra freezer. In fact, I have 3 freezer chests! Again, NO excuses!! You can't tell me well I live in a small apartment, I don't have room. Guess what? Yes you do. Why? because we live in a small apartment. We are an Active Duty military family. When we found out our move to Texas was only a short duty and here for barely 2 years we decided to put all of our stuff in storage and I literally mean our entire house is in storage. The only boxes we opened we kitchen things, bedding, bathroom. We bought furniture to fit a small apartment. Our house is in two big garages under our apartment. However, you bet your ass my freezers are in my place!! On as in the corner of our dining area at the foot of the table. I don't care we can move it and people can sit close of they come visit. I'm not sacrificing my freezer. The OTHER is in the kitchen and the third..... IN MY CLOSET! yup in my closet in the bedroom. YOU MAKE IT WORK!  I have to admit! I'm giddy with excitement to think when we leave here we will finally have a whole house again haha! I am totally splurging and buying a Big huge upright double door Freezer!! or two...... I don't care where they have to be put, it's happening in my life!

    Another issue that I hear from people is that they just don't have time! COUGHbullshitCOUGH. Do you have time to read this blog? You either found me on pinterest or facebook or google. so that means you were on a computer. You have time. I have an insanely busy life. I have a special needs child that consumes so much of my time. I have an active duty husband who is in a role that keeps him away from home a lot and it's a quite stressful role (he works with wounded warriors) so I really don't ask much of him at home. He needs to be able to come home and de-stress. I run a personal development, health and wellness business from home. With that I don't just "SELL" weight loss products as some may think. It's a whole line of health and wellness but I also coach. I have a team, a group of people that I life coach daily for health, lifestyle changes just over all well being. As I myself make changes in my own personal life. We all have bumps in the road. I hit a pretty nasty road block this year with the loss of a child and now I'm ready to get back on the wagon and stop feeling sorry for myself, lose the weight I gained in my self pity, being lazy etc. It's happening, It will happen. I'm aware and I know what to do so I'm doing it. You can to!  I make my husband a fresh breakfast and lunch for work everyday! On Sunday, when I'm cooking a family dinner I go ahead and throw in something extra like I roast a pork, or a few extra chicken breasts and this is what I use for my husband's lunches during the week. I cut up a bunch of fruit and keep it in a bowl and just dish out each night a serving for his lunch each day, pack his favorite pistachios, figs, a coffee and smoothie and he has his food. Luckily I'm home to eat during the day so I have control over what I eat however if I had to work out of the home, it wouldn't be any different than what I pack for him.  One day I week I batch cook and then DONE for the week for lunches and breakfasts things like egg cups or little frittatas for him to grab etc. Turn on a movie, put on some music, get cracking!

    There really just is no excuse to not eat well. Budget isn't an excuse. Space isn't an excuse. Time isn't an excuse because there is always time to find just a couple of hours in your week. EVERYONE has a couple of hours. So for you, for me, for everyone! I am going to be posting a bunch of Paleo meals on a budget!! to help you plan! Help you budget healthy eating!!     Vices, we all have them but how many are willing to give them up? I mean give them up FOR GOOD! My husband and I have/had a major vice and I do believe a big set back in our healthy living transformation.  No matter how clean we ate, we always ruined it by chugging down a chemical filled Diet Cola (you know the red and blue haha!) OR my personal fav a diet rootbeer.  Really though, what is better on a hot day than popping the top on an ICE COLD CAN of frothy goodness? Well by doing that everyday and sometimes 5-6 times a day!! We were being total hypocrites. We eat clean, don't buy processed foods but we used to buy some serious amounts of soda. there were days when I swear that was the only fluid my husband would drink other than a cup of coffee in the morning.  what's the point of all that healthy, organic and fresh made food If you are rinsing it down with chemicals?

    We quit.  As in, Cold turkey, just didn't buy it anymore. We were at the market one day and I said, eh I'm done with soda. I don't need any but if you want to grab some for you then by all means go ahead. I was so proud of the response I got back, he said no!. He decided he didn't want to drink that junk anymore either! To me it was like AHHHHHHHHHHHHH the heavens were singing, the sun was shining those silly little cartoon birds were floating above tweeting joyous tunes! FINALLY, after 10 years, literally 10 years of trying to kick it, the husband was on board!  

    What we did next was just hold on and stayed strong. It's so easy to just cave when it's all around you. At his job, there are vending machines in his office, at the hospital there are little corner shops inside where he can grab one but Alas he didn't! I'm unbelievably proud of him.  We went and bought him a little fridge to stick under his office desk and packed it will water. That other than his coffee in the morning is all he drinks at work, Ice cold, crisp, refreshing water.  For me it was really easy, I'm home with our daughter. I'm not tempted by all of the exposure he gets. My job is to raise our little girl, work on my business at home and bring her to her therapy and other appointments. We are constantly running behind so there is never time to just stop and grab a cold one.  It was going really well for us!

    At home, we enjoy again more water! I do make a decaf unsweetened Ice tea that I brew myself and it's not a prepackaged or powdered concoction. At night instead of a soda, we do enjoy a glass together but that's ok. It's a natural leaf that we steep in water. No chemicals, no sugars, nothing but natural goodness. In the mornings, I pack his lunch, he still has his coffee but I make him a big 1.5liter bottle of water packed with fresh lemon and lime wedges! He loves this after his morning workout and it gives me a chance to really pack in the H2O ounces in his body after a strenuous workout.  It has been working well for us. As far as our daughter is concerned, nothing has changed for her. She doesn't drink soda, wasn't allowed. She likes her milk, water or veggie/fruit juice. She's 3, so I still have wonderful control over her beverage choices.

    The Epiphany....... It had been about 10 days or so since we kicked the habit and really came clean. Whatever possessed us to stop at a convenience store on the way out of town was beyond me!  We stopped and instantaneously we grabbed a couple bottles of the cold fizzy stuff. We didn't even give it a second thought. It truly was a muscle memory response. The years of just running in and grabbing a soda, running out and driving on our way totally just hit play here. As we are driving down the highway, we both crack one open and take a swig. Within seconds we both said UGH, Gag, Ewww that tastes terrible!!!! What the hell were we thinking?????? We had finally come full circle. We had detoxed our addiction and love for this fizzy poison out of our bodies. It tasted terrible, you could just taste how "chemical" and unnatural it was.  We ended up having this long conversation during our travels about good lord what were we doing all these years allowing ourselves to ingest so crap!!?!?! It only solidified our resolve to just not drink it again and just keep it real. Real, whole, fresh, healthy, colorful food and beverage. Our ancestors didn't drink soda at the first thanksgiving, the native americans didn't go to war for their land whilst packing a 12 pack of pop. Why should be continue to harm our own bodies on purpose? That was it. Gone in a flash! No more soda in our home or In our lives. We finally successfully removed the last barrier between clean living and TRULY clean living!

    Have you ever wondered exactly what is this Paleo thing you hear about or Primal way of eating is? It's an amazingly healthy life style. In fact is the only way our ancestors ate. We didn't have Mcdonald's when our forefathers founded our nation. The Native Americans who were here before us didn't eat loafs of bread and pasta. Why should we? Picaso didn't eat a frozen microwave pizza when he was painting.

    When people hear Primal or Paleo they instantly think of cavemen running around beating their chests (well at least the people I have come across when they ask about it). It's really about eating whole foods. Natural unmodified foods. Foods gathered the way they would be in nature and not in a factory. We do not buy convenience food, we do not buy frozen foods or boxed meal kits, or minute rice or kraft mac n cheese. GOD FORBID hamburger helper comes across my threshold, I shall make you eat it box and all before it ever gets cooked in my kitchen.

    Many people will complain and make excuses saying things like, It's too expensive, I have too many mouths to feed, it's cheaper to buy hamburger helper. I don't have enough time to cook from scratch. HOLD THE PHONE YALL!! since when is your family's healthy less important than a few extra minutes or a few extra dollars but honestly those excuses are just that. In FACT since transitioning our family over to a Paleo way of life, OUR GROCERY BILL DROPPED!! We are much healthier, we have a much better delicious variety of foods, FRESH foods, no sluggish cloudy feeling that many get after eating such crap!! and There is extra money in the bank to do things with the family!

    Example........ To feed a family of 4..

    You would need two boxes MINIMUM of hamburger helper $4 total (if on sale)
    You would need 2 lbs of ground beef to go in the mix and the cheap stuff would cost $8 approx. for those 2 pounds
    If you feel like giving your family a vegetable with it then add a few extra dollars.
    Some soda or juice Add another $2 or more dollars. I'm being very lenient on the amount because I'm sure it will cost more. So for one chemical filled, starch and fat filled meal for a family of 4 it would cost you approx. $16 or more.

    Now Try my Paleo version:
    A whole roaster chicken which often go on sale $3
    A pound of Zucchini $1.40
    A pound of Summer Squash $1.50
    A tossed salad for 4 Approx $3
    Water with lemons and lime to drink $1
    A healthy salad dressing (I prefer avocado oil and vinegar but whatever you chose for sake of argument) for a family of 4 $1.25
    My total Amazingly fresh, filling and healthy, chemical free, preservative free, terrible starch free meal costs only a whopping $8.15  That would be HALF of your sugar, starched and fat filled meal.  This mind you is exactly what I made for dinner tonight with my family.  However we did add some honeydew melon for a sweet ending and that cost me $1.25 because I only used half and that STILL brings me way under that convenience meal. I have enough money left over to make breakfast and have a snack for my family of 4.

    There really is just zero excuse for not doing everything you can to try and eat healthy.  I personally have 3 freezers in my home. When a protein goes on sale, I BUY BULK! I'm talking I have been known to buy 40lbs of boneless skinless chicken breast when it goes on sale for $1.70 per pound. WHen roasting chickens go on sale for under $3 each I BUY !!! We eat well and healthy! we don't scrimp and save and coupon. We don't need to. Sure if you can get what you need cheaply go for it! But why compromise your family's health?   If you want pasta? I can give you an amazing inexpensive pasta recipe that WILL feed your family of 4 full!! and it will be cheap and healthy instead of those boxed alternatives.

    Egg cups egg cups egg cups egg cups...how many times can you say that fast?? So before I start with this little diddy on how to make these, I must confess first. I never made them before tonight. I have seen them around here and there, people have talked about them yadda yadda but I never tried them. I'm once again suffering from insomnia and decided why not prep some food for the week! I had 2 dozen eggs, I was already making a frittata and I had some amazing bacon... WHY NOT? well shit they smelled so good that I couldn't wait to eat one. I BURNED MY LIP and tongue! So now I am sitting here nursing a blister on my mouth all in the name of bacon. Would I do it again? YES it's BACON!!!!!!!!!!  Anyhow this is the most easy, ridiculous thing you can make that is so grab and go it's insane. It ends all excuses for not having enough time to have a great protein packed breakfast. it would even make a great pre or post workout snack!. It's 3am here in Texas and I'm cooking, so If I can.........anyone can find 20 minutes to do this.

    First off, I'm a lazy cook. I don't like messes and well I don't like trying to pry stuff out of pans or other cooking vessels. So here I used a cupcake liner (foil not paper) to make these.

    All you need, ARE YOU READY for the crazy stupid easiness ???

    1 dozen eggs
    12 strips of bacon cut in half
    a muffin tin
    salt and pepper if you feel so inclined.

    THAT"S ALL FOLKS!

    Preheat your oven to 425 degrees
    Line your muffin tin with your foil cupcake liners.

    Take one half of a strip of bacon and lay it down one side of the cup...across the bottom and up the other side........ Now take another half of a strip and do the same thing but on the side of the cupcake liner that doesn't have bacon covering it. it will make a little bacon cup inside the cupcake liner (YES you will double over the bottom of the cup but that's awesome right? TWO layers of bacon on bottom, hell yes please).

    NOW for the hard part... Crack one each into each bacon filled cup!
    Add some salt/pepper if you wish and bake! for 15-20 minutes! THAT'S IT!

    however WARNING!! DO WAIT until it cools before you attempt to eat scolding HOT BACON!!!!!
